To back up a bit, Max isn't an absentee dad or anything. He's also not so obsessed with his business that everything falls by the wayside. Yes, he's driven, but he's found a sort of balance that allows him to stay on top of his job while being able to enjoy spending time with his daughter. The thing he lacks? A meaningful romantic partner. Or even time for a meaningful romance. The guy has internalized what happened with his wife (although he thought he'd dealt with it and moved on) and had sort of shut himself down emotionally for anyone besides his daughter.
In other words, Cozy's laid back approach to everything (plus his full-blown attraction to her) throws him for a loop. He has to come to terms with a few things before he realizes he CAN do the relationship thing and be happier for it.
On Cozy's end, she's bouncing back from dealing with a medical issue that totally derailed her former life. She has a few triggers she has to work on (the corporate mentality she thinks most business people have, among other things) before she can consider Max as more than a short term fling. On the plus side, she completely adores Max's daughter. So she throws herself into having the best summer possible and somehow ends up falling hard for the big guy.
A little sneaking around, a few familiar faces, charcuterie boards, and a whole lot of smolder. GOOD STUFF.
